#FoodShareFriday // Bolognese Pasta Bake

Since starting Slimming World I have found that I am making a lot of meals from scratch.

One of my favourite types of meal is meat and pasta. My two favourite foods! 

My boyf makes a killer bolognese (which is also syn free). But when he is working I often make this variation as it less tomato-y and has more veg in it.

Ingredients 

400g Dried pasta - Any type
1 Onion, peeled and chopped
1 medium carrot, peeled and chopped (or a tin)
3 cloves of garlic, peeled and crushed
500g extra lean mince
400g chopped tomatoes
250ml beef stock
1 tsp oregano
Salt and pepper
110g reduced fat mozzarella

Syns per serving: Green 10.5, Red 13.5, EE 2.5

I also add a splash of balsamic vinegar, a splash of worcester sauce and a heaped tablespoon of sweetener.

Preheat oven to 180C.

Cook pasta as per instructions and drain.

Fry off onion, carrot and garlic and mince in a non stick frying pan until mince is browned.

Add tomato, stock and oregano. Bring to boil and season with salt and pepper.

Reduced heat and simmer for 20 minutes stirring occasionally. Remove from heat.

Pour half of sauce into a baking dish. Top with pasta and pour over remaining sauce.

Place diced mozzarella
